- 3/4 cup unsalted butter softened (1.5 sticks)
- 1 cup sugar (I use dark brown sugar) (plus a small bowl of white sugar for dipping, optional)
- 1 large egg
- 2 tsp vanilla
- 2 tbl water
- 1/4 cup dark molasses
- 2-1/2 cups flour (I use whole wheat flour)
- 1 tsp baking soda
- 3 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Combine the flour, baking soda, ginger, cinnamon, cloves, nutmeg and salt until well mixed. Set aside. In a separate bowl, beat butter and sugar together with electric mixer until light and fluffy. Add egg and beat well. Add molasses, water, and vanilla and beat again until well combined. Add the dry mixture (flour, baking soda, and spices) and beat until well incorporated. Scoop out with a cookie dough scoop or a teaspoon and drop in a little bowl of sugar on one side (optional). Place about 2 inches apart (sugar side up) on an ungreased baking sheet. Bake at 350 degrees for about 10-12 minutes.
You can play around with the amount of the spices you add for different flavors.
